- 1 cup full-fat (4%) small-curd cottage cheese, well-drained
- 1 1/2 cups rolled oats or oat flour
- 1/2 cup vanilla protein powder
- 2 tbsp pure maple syrup or honey
- 1 tbsp fresh lemon juice
- 1 tbsp fresh lemon zest
- 1/3 cup freeze-dried blueberries, crushed slightly
Instructions
- Add the cottage cheese, maple syrup, lemon juice, and lemon zest to a blender. Blend until completely smooth and creamy like a thick pudding. This takes about 2 minutes.
- In a medium mixing bowl, combine the oat flour and vanilla protein powder. Pour the blended cottage cheese mixture over the dry ingredients and stir until a thick dough forms. This takes about 2 minutes.
- Gently fold in the crushed freeze-dried blueberries. Do not use fresh berries as they release too much water and make the bites soggy. This takes about 1 minute.
- Place the dough in the fridge for 15 to 20 minutes to firm up. Once set, scoop tablespoon-sized portions and roll into smooth balls using slightly damp hands.
- Arrange the bites on a tray and chill before serving. Store them in the fridge for up to 5 days or in the freezer for up to 2 months.
Notes
- Drain your cottage cheese well before blending to avoid a wet dough.
- Use freeze-dried blueberries only. Fresh or frozen blueberries add too much moisture.
- Damp hands make rolling the bites much easier and prevent sticking.
- You can swap vanilla protein powder with unflavored or another flavor you enjoy.
- These bites taste best cold straight from the fridge or freezer.
- For a finer texture, blend the rolled oats into oat flour before mixing.
