These no bake lemon blueberry cottage cheese bites are a quick, high-protein snack made with simple ingredients. They come together in minutes and are perfect for meal prep or a light summer treat.

Ingredients

  • 1 cup full-fat (4%) small-curd cottage cheese, well-drained
  • 1 1/2 cups rolled oats or oat flour
  • 1/2 cup vanilla protein powder
  • 2 tbsp pure maple syrup or honey
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh lemon zest
  • 1/3 cup freeze-dried blueberries, crushed slightly

Instructions

  1. Add the cottage cheese, maple syrup, lemon juice, and lemon zest to a blender. Blend until completely smooth and creamy like a thick pudding. This takes about 2 minutes.
  2. In a medium mixing bowl, combine the oat flour and vanilla protein powder. Pour the blended cottage cheese mixture over the dry ingredients and stir until a thick dough forms. This takes about 2 minutes.
  3. Gently fold in the crushed freeze-dried blueberries. Do not use fresh berries as they release too much water and make the bites soggy. This takes about 1 minute.
  4. Place the dough in the fridge for 15 to 20 minutes to firm up. Once set, scoop tablespoon-sized portions and roll into smooth balls using slightly damp hands.
  5. Arrange the bites on a tray and chill before serving. Store them in the fridge for up to 5 days or in the freezer for up to 2 months.

Notes

  • Drain your cottage cheese well before blending to avoid a wet dough.
  • Use freeze-dried blueberries only. Fresh or frozen blueberries add too much moisture.
