- 1 tbsp olive oil
- 1 lb (450g) ground beef
- 4 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional)
- 3 cups beef broth
- 2 cups milk or heavy cream
- 12 oz (340g) pasta (penne, rotini, or fettuccine)
- 1 tsp Italian seasoning
- 1/2 cup grated parmesan cheese
- 2 tbsp butter
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large high-sided skillet or Dutch oven over medium heat. Add ground beef and cook for 5 to 6 minutes, breaking it apart until browned and fully cooked.
- Add minced garlic, salt, black pepper, and red pepper flakes. Stir and cook for 1 minute until the garlic is fragrant.
- Pour in the beef broth and milk. Stir to combine. Add the dry pasta and Italian seasoning. Make sure the pasta is mostly submerged in the liquid.
- Bring to a gentle simmer, reduce heat slightly, cover, and cook for 12 to 15 minutes. Stir occasionally to prevent sticking and ensure even cooking.
- Once the pasta is tender and most of the liquid is absorbed, reduce heat to low. Stir in the parmesan cheese and butter until melted and creamy.
- If the sauce is too thick, add a splash of milk or broth. Adjust salt and pepper to taste.
- Remove from heat. Top with fresh parsley and extra parmesan. Serve hot.
Notes
- Use heavy cream instead of milk for a richer, thicker sauce.
- Penne, rotini, and fettuccine all work well. Avoid very thin pasta like angel hair as it may overcook.
- Stir the pasta every few minutes while it cooks to keep it from sticking to the bottom of the pot.
- If your sauce gets too thick as it sits, stir in a small splash of warm broth or milk to bring it back.
- You can swap ground beef for ground turkey or ground chicken if you prefer a lighter option.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stovetop with a splash of broth or milk.
