Ingredients
Scale
- 2 pounds potatoes
- ½ medium-sized red onion, diced
- ¼ cup chopped dill
- 2 tablespoons extra virgin olive oil
- 1 lemon, juiced
- ½ – 1 teaspoon red chili flakes
- 1 teaspoon sumac
- salt and pepper to taste
Instructions
- Add the potatoes to a pot and fill it with water.
- Cover the pot and bring the water to a boil.
- Reduce to a simmer and cook potatoes for 20 minutes until tender.
- While potatoes cook, prepare other ingredients.
- Drain water and cool potatoes in cold water.
- Peel and cut potatoes into cubes.
- Place potato cubes in a large bowl.
- Add remaining ingredients and toss until combined.
- Enjoy!

- Adjust chili flakes for desired spice level.
- Serve chilled for best flavor.
