- 200g lean ground beef
- 2 medium potatoes, diced skin on
- 1 cup broccoli florets
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- Salt & black pepper to taste
Instructions
- Preheat oven to 400F (200C).
- Toss diced potatoes with olive oil, oregano, thyme, garlic powder, salt, and black pepper.
- Spread them on a baking sheet and roast for 25-30 minutes until golden and crispy.
- In a skillet over medium heat, cook the ground beef, breaking it up as it cooks and seasoning with salt and pepper until no longer pink and slightly crispy on the edges.
- In a pot, bring water to a boil and steam broccoli florets for 2-3 minutes until bright green and tender-crisp.
- Arrange the ground beef, crispy roasted potatoes, and steamed broccoli on a plate and season with a final pinch of salt and pepper if needed.
