Ingredients

  • 1/2 cup cottage cheese (blended smooth)
  • 1 large egg
  • 1/4 cup honey
  • 1 1/2 cups rolled oats (keep them whole, do not blend)
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 3/4 cup fresh strawberries, finely diced (divided)

Instructions

  1. In a medium bowl, whisk together the blended cottage cheese, egg, honey, and vanilla until smooth.
  2. Stir in the whole rolled oats and baking powder. Let the mixture sit for 5 minutes to allow the oats to hydrate.
  3. Gently fold in half of the finely diced strawberries.
  4. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. Scoop 1-inch balls of the thick batter onto the prepared baking sheet, flattening them slightly into thick discs.
  6. Press the remaining diced strawberries onto the tops of the bites.
  7. Bake for 12–15 minutes, or until lightly golden. Let them cool completely on the baking sheet to firm up.

Notes

  • Store in an airtight container for up to 3 days.
  • For a firmer texture, refrigerate after cooling.
  • Substitute maple syrup for honey if preferred.
