- 1/2 cup cottage cheese (blended smooth)
- 1 large egg
- 1/4 cup honey
- 1 1/2 cups rolled oats (keep them whole, do not blend)
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 3/4 cup fresh strawberries, finely diced (divided)
Instructions
- In a medium bowl, whisk together the blended cottage cheese, egg, honey, and vanilla until smooth.
- Stir in the whole rolled oats and baking powder. Let the mixture sit for 5 minutes to allow the oats to hydrate.
- Gently fold in half of the finely diced strawberries.
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Scoop 1-inch balls of the thick batter onto the prepared baking sheet, flattening them slightly into thick discs.
- Press the remaining diced strawberries onto the tops of the bites.
- Bake for 12–15 minutes, or until lightly golden. Let them cool completely on the baking sheet to firm up.
Notes
- Store in an airtight container for up to 3 days.
- For a firmer texture, refrigerate after cooling.
- Substitute maple syrup for honey if preferred.
