- 2 medium zucchinis, sliced

- 1/2 cup sour cream
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 375°F (190°C).
- Layer zucchini slices in a baking dish.
- Mix beans, corn, onions, and taco seasoning in a bowl.
- Spread the mixture over the zucchini.
- Top with shredded cheese.
- Bake for 25 minutes.
- Garnish with sour cream and cilantro before serving.
