Ingredients
Scale
- 1 lb boneless, skinless chicken breasts
- 1 cup cottage cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Season the chicken breasts with garlic powder, Italian seasoning, salt, and pepper. Place them in a baking dish.
- Bake the chicken for 25-30 minutes, or until cooked through and no longer pink in the center.
- Remove the chicken from the oven and slice it into bite-sized pieces. In a bowl, layer the sliced chicken, cottage cheese, marinara sauce, mozzarella cheese, and Parmesan cheese.
- Return the assembled bowls to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil if desired and serve warm.
Notes
- Use full-fat cottage cheese for a creamier texture in the bowl.
- You can swap marinara for any tomato-based pasta sauce you have on hand.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in the oven at 350°F for best results, or microwave until heated through.
- Serve over zucchini noodles or cauliflower rice to keep it low-carb.
